This is one of my favorite instant Korean noodles, Kimchi Noodle Soup.
You can cook this how you would cook instant noodles as directed on the packet’s instructions. But here’s how I do it:
- Cook the noodles as directed on the instructions; while the it’s boiling and just before the noodles are about to be fully cooked, add a raw egg. Don’t stir the raw egg. Just poach the egg.
- Serve in a big bowl with a small bowl of kimchi on the side
- Break the poached egg and start eating
- For the kimchi, you may choose to eat it on the side or add some in the soup — it’s really much more delicious that way.
Spicy level is very low compared to the Shin Ramyun. The soup definitely taste like kimchi. It’s good to have in the pantry for those late nights midnight snack.
